How ice cream appeared

The Chinese became more adept at preparing frozen dishes, they imported and preserved snow from mountain heights, and also developed fruit ice (fruit juice combined with snow). Collecting and storing ice is described in Shi Jing's poem around 1100 BC. By the thirteenth century, a variety of iced desserts were available on the streets of Beijing, they were sold directly from carts.

After China, in the fourteenth century, frozen milk and fruit ice appeared in Italy. Their appearance is associated with the names of Marco Polo and Bernardo Buontalenti, a Tuscan pastry chef. Marco Polo, a famous Italian explorer, spent about 17 years in China in the second half of the 13th century. There are unsubstantiated claims that it was Polo who brought the ice cream to Italy after a stay in China, where he discovered a recipe based on milk with frozen fruits. However, such a discovery should have left some kind of mark in history, but there is none.

Catherine de' Medici is the Queen of France of Italian descent. But Italy still plays an important role in the introduction of frozen desserts, the recipes of which were a mystery. Cooks were kept for the rich, who could maintain special underground ice storage facilities. Only the rich could appreciate the taste of the icy dessert.

In 1533, when the Venetian Catherine de' Medici married King Henry II, she used fruit ice to showcase her country's culinary delights to Western Europe. During the month-long wedding celebration, her pastry chefs served ice cream daily, with flavors of lemon, lime, orange, cherry and strawberry. She also presented a semi-frozen dessert made from sweetened cream, which looked exactly like modern ice cream.

As a result of a technical breakthrough in the 1560s, ice cream began to be completely frozen. Spanish doctor Blasius Villafrank, who lives in Rome, discovered that the freezing point of mixtures can be reached faster if saltpeter is added to a container of snow and ice. Florentine pastry chefs have begun producing the world's first solidly frozen ice cream. For decades, molded, multi-flavored desserts shaped like hemispheres have appeared in France, such as Glacee Bomba or simply Bomba.

Freezer for making ice cream

In the 1840s, an American lady, Nancy Johnson, presented the world with the first ice cream maker assembly. Some sources dedicated to the history of ice and ice cream claim that Nancy Johnson did not patent her invention, but reports show that she applied for and received a patent in 1843.

It seems, however, that Mrs. Johnson did not know much about technical marketing methods, and the machine was patented again by Mr. William Young in 1848, cleverly calling Johnson's patent an Ice Cream Maker. In 1851, Jacob Fussell began producing ice cream commercially in Maryland. Capitalizing on his success, he opened ice cream factories elsewhere in North America and has since become a legend in the industry.
